Pineapple Tarts for CNY 2012

A little early for this but as I only have weekends to bake, I have already begun trying out various recipes for pineapple tarts. I must confess that this is the first time ever I have tried baking pineapple tarts and its been kinda fun!

Below is my flower blossom pineapple tart (open faced tarts).













I will also try another recipe for rolled tarts but I first have to go search for a suitable mould. I hate those plastic moulds that needs to use my thumbs to squeeze the dough out ... feel so yucks! I already have some recipes in hand and so looking forward to the next few weekends so that I can try them out.

Below is a pic of my pre-rolled pineapple paste. You really need to prepare these before handling the dough. I cooked and prepared them 2 days before and kept them in an airtight container in room temperature. You can also keep them in the fridge.

LV Handbag Cake

My first ever sculpted cake!!!! Was shaking and could not even hold the knife properly I tell you ... so scared to cut the cake like as if it was going to hurt! And the more I sculpt, the smaller the cake became and that's how I ended up with a generally smaller cake than I expected .. hahaha.

















There are many ways to do the monograms on the cake but I learnt it the hardest way! Free hand painting! Monogram by monogram and it literally took me hours! Now I know why people charge close to RM500 for sculpted cakes!!!! But dont worry, mine not that expensive la ... its totally affordable ... hehehe.

Hello Kitty Cake





















Received an enquiry for a Hello Kitty cake from SIL's friend. She wanted a cute cake for a girl who looooooves Hello Kitty and left it entirely to me on the design. After confirming the size and flavour of the cake . .then I asked the age of the birthday girl .... she said more than 30 wor .. aiks! Thot I was baking for a little girl .. hahahaha.

This is a vanilla butter cake with a Princess theme for a 7 year old girl. Her parents ordered this for her and left it all to me to come up with the design. I was told, Princess was smiling ear to ear when she saw the cake :-)

Minnie Mouse Cake

Received an enquiry 2 weeks ago for a girl's 1st birthday and the parents wanted a simple round cake. So I suggested to them my novelty Minnie chocolate cake! Its still a pretty simple cake but looks really attractive I would say. Its my first ever novelty cake order!
















Then i found out that they were living in Seremban and didn't mind at all to come to KL to collect it. I felt so honoured!

There were no news from them after 2 days which I was rather disappointed. Usually my customers would at least send a thank you sms or a complimentary sms (thank god so far no complaint sms!!) but nothing from this particular customer. Then one night, the call came and they were very happy with the cake!! He even passed on my contacts to all his cousins, aunt & other relatives who enquired about it. I was happy sampai tak boleh tidur that nite. Hehehe. Cannot really explain how happy I feel when people tell me how much they loved my bakes. Its not the money really. Its customer satisfaction. Simple as that.

Best Durian Cake!!

Says who? Says all 16 people who tried it!!! Oh well .. the story goes like this.

MIL celebrated her 72nd birthday over the weekend and a week before that, I baked my first ever durian cake. The texture was ok and since she loved durian cake, she wanted one for her birthday.

















I baked the 2nd one last week and improved on my recipe. Had piled on more durian pulp for its fillings and i must say this one turned out very delish instead!!!

While at the restaurant, we offered some to the waitress & the captain as well .. and oh boy! they all loved it and the captain was certainly surprised that it was home baked! She offered to promote for me and told me that once she promotes it, I better be prepared with orders streaming in! I politely declined as I can only bake on weekends and furthermore, the restaurant is quite far away from where we live.

Nevertheless, the captain was very impressed with the taste of the cake that she ordered one for herself! I was very happy that nite, hahaha.

Another "Love" Cupcake

Got a request from an FB friend to bake a small batch for her church gathering. I think it was a very private wedding / engagement (not sure) and she wanted a design with some "love" motives in it. As she does not like stuff too sweet, I tried making them a little simple but still sweet-looking.

















Within 3 hrs or so, I received an sms from her saying "Hi! The cupcakes were a hit. Rich in butter n taste yet soft in texture. Teeny bit sweet for me but everyone loves it. Thanks Jo ;)"

It sure makes my day when your customers takes the time to give you their feedback and tell you how much they loved my bakes. Makes me motivated to do better and improve on my baking/cake decorating skills as well as try to improve on my recipe too.

Zoo Animals Cupcakes

There was an order previously for a pre-wedding dinner and I made a lovely batch of purple cupcakes. The mother in law of the bride loved it so much that she ordered a batch of cupcakes for her 2 grandsons that also enjoyed the wedding cupcakes so much! As she is already 70++, she does not know what design she wanted for her grandkids, so I make a batch with Ben 10 theme. As expected, the boys were over the moon!

The following week, they went to a bakery and the grandma wanted to buy them some cakes to enjoy again, but the boys said that they prefer the Ben 10 ones wor .... oh how I wish I could hug & kiss them .. wuahahahaha!
















So here was another for their afternoon tea. Made them simpler with less icing so decided that the zoo animals theme would be best. Still looks cute but with minimal icing.

Princess Cupcakes

















A colleague of mine wanted to surprise her niece with a princess themed cupcakes for her 5th birthday. The lil girl was really happy to see the pretty cupcakes (so said the aunty la!) and they are now looking forward to the elder niece's birthday in Aug as they cant wait to order the next batch! But I am challenged to come up with a female version of Ben 10 (and its not Gwen ya!!) .... so Im scratching my head now .. hahaha.

Simple & Sweet Flower Cupcakes

It was report card day last week so I decided to bake some simple cupcakes for Bryan's teachers. Bryan has been enjoying school for the past year and a half and I am simply proud of him & proud of the teachers for all their dedication to ensure that my son has a fun & enjoyable learning experience. Thus far, Bryan really does enjoy school & loves to have his friends play with him.

Ben 10 Cupcakes

The school had a celebration for April babies yesterday and Mommie decided on some Ben 10 cupcakes since Bryan is sooooo crazy over this series lately. Was not sure how many kids in the class but I guess a box of 16 large cuppies should be enough for the kids + teacher. The flavour of the cuppies are chocolate and iced with buttericing and a few decorated with edible images. Will have to make a full Ben 10 cake for his home celebrations this weekend and will post it up her for your comments, ok?

Train Cake

My very first order for a real cake for a real customer!!!! Well, so far, I've had orders for cupcakes and was busy all of Christmas fulfilling them, but this is the first time I got an order for a full whole cake!

I have baked & iced many cakes before but they were always for family and friends but this one can collect money one .. wuahahahha!

Customer only had one request and that it must be a Thomas Train cake. I googled for some ideas and finally decided on this train design as I felt it was much more attractive than a simple round or square cake. Do you like it?


















Its a vanilla butter cake with buttericing. Face of Thomas was hand-moulded fondant. Every single thing on the cake board is edible including the tyres, tracks, etc :-)

The cake was almost 2.5kg *heavy*. I normally do not deliver but if its nearby or on my way, I dont mind delivering it to the customer. Qi Xuan was really really happy to see his cake! Cake deliveries are every baker's nightmare but I guess when you see a child so happy with your creation .. its indeed very satisfying.

Decorated Sugar Cookies

I realise that cupcakes are kinda "over" and the new kid in town is the decorated sugar cookies. Seen some wedding favours these days with butter cookies beautifully drawn with royal icing with colors, so really wanted to try to see if its easy to do.

I found a really good butter cookie recipe and the dough is kinda easy to prepare. The smell in the kitchen while it was making was sooooooo good! Allowing it to rest while it cooled off, its time to prepare the royal icing. That was easy as well but not cheap! Those days people used pure egg whites whipped with icing sugar, but these days, and like many other things, food ingredients are no longer safe, so the trend is to use meringue powder. And the only brand that we have in Malaysia is from Wilton. Which is kinda expensive, but anyway, you always need to be safe than sorry right?

















It was really fun piping in the colors - but the REAL PAIN in making these sugar cookies in waiting for the royal icing to dry. It literally takes ages!! They never ever dry in our so-called room temperature as we have such high humidity levels. So you need to dry them in a air-conditioned room for at least 3-4 hrs (overnight is better) and only until they are really dry that you can stack them or pack them into cellophane bags.

So now I understand why for such a tiny wedding cookie favour, they can sell it for a higher price than fully decorated cupcakes! Cos need to factor in air-cond cost .. and all the waiting time .. and painfully painting each and every one in tiny details!!!!

Garden Cake & Cupcakes

Late Friday evening, SIL called to order some cupcakes for a housewarming party that she was invited to by her immediate neighbour. She didnt know what to get them at first and then she remembered that eldest SIL and her daughters were at my place learning to bake a orange butter cake and some cookies. So she wanted some cupcakes ... and at the same time helped me promote them lor ... so thanks to you Vivian.

















The same night, my niece called to ask if I could bake her a birthday cake as well .. and she wanted it by tomorrow as well ... same deadline by SIL! I panicked a bit but nevertheless, I did promise her that I'll bake a simple one which she didnt mind. I dont have the heart to turn down the little girl. Birthdays are very important to the younger generation mah, right?

So late Friday evening, i went out to get some groceries. Quickly baked a chocolate cheese cake the same night and let it rest to cool overnight. Next morning, I woke up at 4am to bake an orange cake and 2 batches of cupcakes, left them to cool and quickly frosted them.
















The most easy theme would be the garden theme and since I have ready made fondant flowers in hand (made them earlier for mom's birthday), I used them in the said "garden".

I finished this at 9am, just in time before Bryan wakes up. He was pretty excited to see them. And so was I.

Thanks Facebook!

That I managed to find so many long lost friends. Its really a gem to rekindle both primary and secondary school mates after 20 odd years!

Had a tea party at my place last Sunday with some of them and it was really really nice to meet all of them again. After all these years, there are still so many things that are similar (even looks, my god!) and so many funny stories to share about what we used to do in school,etc.


















December would be another busy time as I have at least 3 other friends returning from abroad. Cant wait for that to happen.
